Our Beginning
In 2010, Chef Takeshi Yamamoto opened a small ramen shop with just 12 seats in a quiet corner of Tokyo's Meguro district. With nothing but a family recipe for tonkotsu broth and an unwavering commitment to quality, he served bowl after bowl to anyone who wandered in.
Word spread quickly. Within two years, the wait stretched around the block. What began as a humble ramen-ya grew into Umai Yume — a celebration of Japanski cuisine spanning four cities, each location carrying the same soul that filled that first tiny kitchen.
